DESCRIPTION
Tojiro Honesuki (Boning Knife) 150mm DP3 series:
DP3 series are my starting point for quality.
They are a good example of a well-made factory knife.
They are "stamped" knives ( imagen a cookie cutter on a sheet of VG10 metal) like most mass-produced knives,
but many of the other parts of production including finishing, are done by hand.
DP3 series have a med-high heat treatment of 60RHC, meaning they will hold an edge well without being too brittle.
These knives offer good cutting ability yet fairly durable for how thin the blade is.
These knives were defiantly designed to be work horses!
Tojiro represent extreme value and I personally recommend these for apprentice chefs and home cooks.

About VG10 steel: The DP3 series is a 3-layer blade, the core consists of high cobalt alloy steel (VG-10).
This is clad on each side with a layer of high chrome rust resistant steel.
Basically, a great steel. Only a few only brands mass produce knives in this quality of steel. Shun actually uses VG10 and only VG derivatives. (10 points for shun)
